Make a big batch and portion them into containers. You can also use leftover chicken or rotisserie chicken to make it even easier.<\/p>\n<p>Cost per serving: ~$2.50<\/p>\n<h4>Vegetarian Chili<\/h4>\n<p>This hearty, one-pot meal is packed with fiber and plant-based protein.<\/p>\n<p>Cost per serving: ~$2.00<\/p>\n<p>Ingredients:<\/p>\n<p>1 can black beans<\/p>\n<p>1 can kidney beans<\/p>\n<p>1 can diced tomatoes<\/p>\n<p>2 diced, cooked sweet potatoes<\/p>\n<p>1 onion, diced<\/p>\n<p>1 bell pepper, chopped<\/p>\n<p>1 can of green chilies<\/p>\n<p>1 tbsp chili powder<\/p>\n<p>1\/2 teaspoon oregano<\/p>\n<p>1\/2 teaspoon cumin<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>Instructions:<\/p>\n<p>Step 1: Saut\u00e9 onions, green onions, and peppers in olive oil.<\/p>\n<p>Step 2: Add remaining ingredients and simmer for 30 minutes.<\/p>\n<p>Step 3: Let cool and portion into containers.
